German surplus grip assembly questions

I just bought one of these, and was noticing its different than other grip assemblies I've seen. The first thing I noticed is that it's missing the 'stop dog'; the little chingadera that sits in the center of the sear on the sear pin. Is that part optional? At first I thought I got a grip that was missing a piece, but I googled around and all of the german surplus grips I find on line are also missing that part.

Also, the german grip has a bolt lock that's de-activated by the grip safety. Is this designed to work with, or replace the ratcheting top cover?

You have me curious about the stop dog now. The library shows the selector lever and the bolt lock that work together.
Omit the bolt lock. Your receiver would need clearance for it to stick up.
I left my selector as is but next time apart I am going to trim it like the early ones cutting the upper bent item away

Good info there, but it didn't really address my question. I thought I had written two questions, but I really was only scratching my head out loud about the stop dog. In playing with it, I can see that the disconnector does not 'pop out' when the trigger is pulled with the selector in semi, like my other grip assemblies. Either way, it doesn't discuss the absence of the stop dog.

..and of course, the question I did pose, does the bolt safety work with a ratcheting top cover; or is it to be used with a non-ratcheting top cover?

According to the UZI book, the stop dog was added as a safety measure, apparently when set on semi sometimes you got a 2 shot burst instead. The stop dog and a redesign of the sear corrected this. There is an old style and new style sear, the stop dog is only present on the new style setup. Germany never upgraded to this new style.

The added bolt stop was requested by Germany on their guns, it prevents the bolt from retracting when on safe. You have to depress the grip safety and have the selector in the full or semi position to drop it out of the way. The ratcheting top cover is retained, that is there so you cannot "short stroke" the bolt during cocking and get the bolt far enough back to pick up a round from the mag but not be far enough back to catch the sear. Early German guns lacked these but were retrofitted after a few ADs during cocking, one resulting in a death.
