It used to be that subguns.com and sturmgewehr.com had a steady flow of UZIs (and other full autos) sold by private individuals. Now it seems like most of the stuff there is being sold by vendors charging top dollar.

Yeah, I think that's pretty much true for all MGs, not just Uzis.

In a lot of ways, the buy/sell of MGs has reverted back to the pre-internet mode. That is, it used to be Dealers with high dollar ads in periodicals like Machine Gun News and Shotgun News, and J.Curtis Earl Catalogs, and between individuals who knew each other or who knew a guy that knew a guy who's willing to sell. Now it's Dealers with high dollar ads on the internet, and between individuals who know each other or who know a guy that knows a guy who's willing to sell.

Also, with the higher value of MGs, a lot of the (ever shrinking) U.S. middle class, more people are being squeezed out of the prospect of owning an MG. Plus, the higher value has made MGs something to hold as an investment (even though MG prices in general have not held their own against the DJIA since late last year - Trump election), and perhaps pass from generation to generation like real estate, art, and other collectibles. Case in point, your "new" serial no. 2 Group Ind. Uzi.

ETA: The understandable and justified fear of internet scammers has also damped interest in individual to individual internet sales of MGs.
